Step-by-Step Guide

Step 1: Prepare the Dough for Frankie Roti

  • In a mixing bowl, combine 1 cup all-purpose flour, a pinch of salt, and 2 tbsp oil.
  • Gradually add water and knead into a soft, smooth dough.
  • Cover with a damp cloth and let it rest for 20 minutes.

Step 2: Marinate the Chicken

  • In another bowl, add 250g boneless chicken pieces.
  • Mix in 1 tbsp yogurt, 1 tbsp lemon juice, 1 tsp red chili powder, ½ tsp turmeric, 1 tsp garam masala, ½ tsp cumin powder, salt, and 1 tsp ginger-garlic paste.
  • Coat well and marinate for at least 15–20 minutes (or longer for deeper flavor).

Step 3: Cook the Chicken

  • Heat 1 tbsp oil in a pan.
  • Add chopped onions and sauté until golden.
  • Add marinated chicken and cook on medium heat for 10–12 minutes until tender and slightly dry.
  • Stir in fresh coriander and a final squeeze of lemon juice. Set aside.

Step 4: Make the Rotis (with Egg Base – Optional)

  • Divide the dough into balls and roll into thin circles.
  • Heat a tawa or flat pan and cook one roti at a time on both sides.
  • If using egg: Beat 1 egg in a bowl, pour a little on the cooked roti and flip to cook the egg side.
  • Brush with ghee or butter for that street-style finish.

Step 5: Assemble the Frankie

  • Place the egg roti (or plain roti) on a clean surface.
  • Spread green chutney or mayo as per your taste.
  • Add a generous spoonful of chicken filling in the center.
  • Top with sliced onions, lemon juice, and chaat masala (optional).
  • Roll tightly into a wrap and secure with foil or parchment if needed.

Step 6: Toast & Serve

  • Toast the wrapped Frankie lightly on the tawa with some butter for extra crispness.
  • Serve hot with extra chutney, ketchup, or lemon wedges on the side.

Chef’s Notes & Cooking Tips

  • Egg Frankie = Extra Authentic: That egg layer makes it taste just like the Mumbai street stalls — skip it if you’re keeping it light.
  • Use Leftover Chicken: Grilled or tandoori chicken leftovers? Shred and repurpose into the filling to save time.
  • Chutney Makes the Difference: A zesty green chutney or spicy mayo brings the Frankie alive — make sure not to skip it.
  • Add Cheese for a Twist: Want a cheesy version? Add grated cheese over the hot filling before rolling.
  • Wrap & Toast Again: Toasting the wrap after assembly gives a golden crisp finish — totally worth the 2 extra minutes.
  • Use Whole Wheat for Healthier Version: Replace maida with atta for a wholesome Frankie — still soft and tasty.

Serving Suggestions

  • Classic Street Style: Serve with green chutney, ketchup, and lemon wedges on the side — just like the stalls.
  • Tiffin or Lunchbox Friendly: Wrap it in foil or butter paper — makes a perfect lunch for school, college, or work.
  • Cut & Serve for Parties: Slice into halves or bite-sized rolls and pin with toothpicks for crowd-pleasing starters.
  • Add Sides: Pair with masala fries or a cold beverage like masala soda or virgin mojito for a complete meal.
  • Double-Decker Version: Add a second filling like spiced mashed potatoes or cheese for an indulgent double-layer Frankie.
